PRALINE WAFER DESSERT

This recipe is cut from an old Keebler magazine advertisement.

45 Keebler Vanilla Wafers
1/2 cup flaked coconut
1/3 cup chopped pecans
1/3 cup brown sugar, packed
3 tbsps butter or margarine
1 pkg instant vanilla pudding mix
1 1/2 cups milk
1 cup heavy cream, whipped

Arrange 21 whole Vanilla Wafers in the bottom of a 9-inch springform pan. Cut a slight portion off of each remaining Vanilla Wafer forming a straight edge. Place those wafers, cut side down, around the edge of the springform pan lapping them slightly in a clockwise fashion.

Combine the coconut, pecans, brown sugar, and butter or margarine in a skillet. Cook over low heat, stirring constantly, until butter or margarine is melted. Continue to cook and stir until the mixture brwons lightly (about 5 minutes). Pour mixture onto a baking sheet to cool. When cool, break the coconut into coarse crumbles. Reserve 1/2 cup of the crumbles and set aside. Sprinkle the remaining crumbs over the Vanilla Wafer base.

Prepare pudding with milk as directed on the package. Fold in the whipped cream. Turn into the pan, spreading mixture gently to the edges of the standing wafers. Sprinkle the reserved crumbs over the top. Chill 4 hours or overnight. Cut into wedges to serve.

Yield: 6 to 8 servings.

Note: This is a great “make ahead dessert” for a busy day since it needs to refrigerate as long as overnight anyway.

What we call scent is made up of essential oils. These are volatile oils that evaporate in the air when they are warmed or exposed to sunlight. The tiny molecules of these essential oils fit into receptors in our nostrils. When they do that we smell fresh flowers, baking bread, pine trees, or whatever.

Essential oils like that make us feel good. They make us think if good things to eat or happy times on holiday. They lift our mood and make us think positive thoughts. This is the principle involved in aromatherapy and in perfume making.

Scents can also make us feel bad too. Some scents are intended to warn us that food has gone off and is not safe to eat. Other scents of which we are not aware, such as sex pheremones, have a powerful effect without us knowing anything about it. They attract us to our sexual partners. Babies recognize their mothers by their smell. There really is good chemistry between us and those we love.

Scent plays an enormous and usually unremarked part in our lives. Being surrounded all day by the scent of car fumes and chemicals, stressed and angry people can have a very negative effect on our psychological state. We need to consciously seek out good scents to lift out more and make us feel good. That is what perfume is all about.

Take a few simple ingredients that you might already have at home – a vanilla pod for example. Cut it up and smell it. Your mood is lighter immediately. Vanilla is a seductive scent that is very attractive and yet warm and comforting at the same time. There is nothing dangerous in this scent.

How can we use the scent of our vanilla pod in perfume? The task in creating a perfume is to capture that fresh scent before it dissipates into the air. It seems almost impossible, but it is perfectly possible.

What you need to do is to put the cut up vanilla pod in a glass jar with a lid. Add some sugar. A third of a teaspoonful should be enought. Then cover it in vodka. Close the lid and shake it. Leave it for as long you like. A month would be about right. When you open the jar you will smell your fresh vanilla scent again. You can add a few drops of this vanilla scent to all kinds of perfumes.

You can do the same thing with lavender, rose petals or other scented flowers. Herbs and spices can also be treated in the same way. If you are gathering fresh vegetable material try to do it at mid day when they are dry and their volatile oils are most concentrated.

You can dilute the scented alcohol with water to use as a perfume or add it to a carrier oil to use as body rub. All you need are a few drops if you use it without dilution. It can be used to perfume a room as well as you. A few drops of lavender added to beeswax makes a wonderful scented furniture polish that doubles as a room freshner.

Other natural remedies include herbs and oils, which can alleviate pain or help your baby calm down and get to sleep. One common remedy for the pain of toothache and teething is clove oil. Cloves contain oils that have warming, numbing properties, so that even holding a whole clove against a sore tooth with your tongue can ease the pain long enough to get to your dentist. Clove oil can be rubbed on sore gums to relieve pain, but only use a tiny amount: too much can upset your baby’s stomach. Other homemade remedies include letting your infant chew on a natural licorice stick (the herb, not candy!) You can find natural licorice in health food stores: real licorice feels cool and also numbs the gums when your baby chews on it. Wild fennel, a relative of licorice, grows in disturbed areas in Northern California and other parts of the country: you may be able to harvest it yourself along the bike paths. The feathery, fern-like leaves and hollow stalks can be chewed or sucked for a cooling, licorice-tasting treat.

Some parents find that rubbing a little pure vanilla extract on the baby’s gums can soothe the crying child: this home remedy may work in three ways. First, merely rubbing baby’s gums can ease the pain by creating opposite pressure; second, the alcohol in vanilla extract will create a warm sensation that is temporarily comforting. The third way this remedy may work is in the calming properties of vanilla itself. Vanilla is known as a soothing yet energizing agent that reduces anxiety and promotes feelings of well-being. Besides that, vanilla has long been used to cure stomach distress: a baby whose stomach is mildly upset from crying or swallowing large amounts of drool may find vanilla soothing to the tummy as well as the nerves.

Most babies that are in the early teething stages are not yet eating eggs.  With that in mind I picked this recipe for eggless teething biscuits.
Ingredients:

1 cup flour
1 cup dry infant rice cereal with bananas (or other flavored or
unflavored infant cereal)
3 tablespoons cooking oil
ice water

Directions:
Preheat oven 425F
Mix flour and cereal.
Gradually stir in oil. Mix a little ice water at a time (start with 1/4 cup) until dough begins to form a ball and pull away from the bowl.
Roll out to the thickness of a cracker on a floured surface and cut into desired shapes.
Bake on an ungreased cookie sheet 10-12 min. or until lightly brown. Cool completely.

Store in an airtight container. (you may want to try 1/2 plain and 1/2 flavored baby cereal as the taste when using full flavored baby cereal is very strong!)
